Vegan Blueberry Protein Pancakes

Creates 3-4 pancakes


Ingredients


1 cup oat flour

1 1/2 scoops vegan protein powder (preferably vanilla flavor)


Protein powder used by the author: Biochem 20g Vegan Vanilla Protein Powder


1 tsp baking soda

1/2 tsp salt

1 1/4 cup almond milk

1 banana

Olive oil

3/4 cup blueberries

6 Strawberries

6 Mint leaves

Maple Syrup


Directions


  1. In a medium-sized bowl, combine oat flour, protein powder, baking soda, and salt. Mix until fully combined

  2. In a separate bowl, mash up 1 banana with a fork.

  3. Add mashed banana and almond milk into the dry ingredients bowl. Mix until fully combined.

Note: The batter should be thick but pourable. If your batter is too thick add in almond milk until it becomes pourable.


4. Add-in blueberries and set the mixture aside.

5. Place a medium-sized pan on the stove, lightly coat with olive oil until the bottom of the pan is fully coated, and turn to medium heat.

6. Once the pan is heated, pour 1/2 cup of pancake mix into the middle of the pan. Cook pancake until each side is golden, flipping it over when one side is cooked. Remove pancake from heat and repeat steps 5 & 6 for the rest of the batter.

7. Garnish each pancake with blueberries, mint leaves, strawberries, and maple syrup.

8. Serve and enjoy!
