Rosemary Sweet Potato Chips

Serves 2-3 people


Ingredients


2-3 Sweet Potatoes

2-3 Sprigs of Fresh Rosemary

1 TSP Salt

Olive Oil

Walnuts (optional)


Directions

  1. Preheat oven to 425 degrees.

  2. Oil a medium-sized oven-safe tray with light later of olive oil (about 2 TBSP).

  3. Slice 2-3 sweet potatoes, width-wise into 1 cm thick slices.

  4. Arrange sweet potatoes on an oiled oven-safe tray. Turn slices over once so that they are coated in olive oil on both sides.

  5. Sprinkle 2-3 sprigs of rosemary and 1 TSP salt across sweet potatoes. Toss together.

  6. Optional: Sprinkle walnuts across the top of the dish ( as much as desired).

  7. Before placing in the oven, lightly drizzle olive oil across the top of the dish (about 1 TSBP)

  8. Bake for 30 minutes.

  9. When finished, remove from the tray and serve

  10. Enjoy!
