Ingredients
2-3 Sweet Potatoes
2-3 Sprigs of Fresh Rosemary
1 TSP Salt
Olive Oil
Walnuts (optional)
Directions
Preheat oven to 425 degrees.
Oil a medium-sized oven-safe tray with light later of olive oil (about 2 TBSP).
Slice 2-3 sweet potatoes, width-wise into 1 cm thick slices.
Arrange sweet potatoes on an oiled oven-safe tray. Turn slices over once so that they are coated in olive oil on both sides.
Sprinkle 2-3 sprigs of rosemary and 1 TSP salt across sweet potatoes. Toss together.
Optional: Sprinkle walnuts across the top of the dish ( as much as desired).
Before placing in the oven, lightly drizzle olive oil across the top of the dish (about 1 TSBP)
Bake for 30 minutes.
When finished, remove from the tray and serve
