Ingredients

1 Head of Cauliflower
4 Oyster Mushrooms
1 Can of Chickpeas
5 Garlic Cloves
1 Cup Arugula
1/2 Onion
1 Lemon Zest
1 Bunch of Parsley
4-6 Radishes
Condiments
Traditional Garlic Hummus
2 TBSP Lemon juice, fresh
1 TSP Spicy Mustard
1/4 cup Tahini
2 tsp Capers
Baking & Spices
Black pepper (to taste)
Salt (to taste)
1/2 TSP Turmeric
1 TSP Cumin
1/2 TSP Coriander
Liquids
2 TBSP Olive oil
2 TBSP Water

Directions
Filling
Cauliflower/ Chickpeas
Preheat the oven to 400F degrees.
In a medium sized mixing bowl, combine 1 head of cauliflower (rinsed and chopped into bite sized pieces), 1 can of chickpeas, 1/2 onions (chopped), 2 cloves of garlic (minced), 2 tbsp olive oil and a pinch of salt. Toss until fully combined
Place veggies on an oiled oven-safe baking tray and place into the oven for 40 minutes. Toss veggies halfway through baking (20 minutes).
Mushrooms
On a medium sized pan, add in 2-3 tsp olive oil
Once oil is heated, place oyster mushrooms into pan and lightly salt. Sear on all sides until golden brown.
Remove from heat and set aside.
Sauce
Caesar dressing
In a small - medium sized mixing bowl or blender combine; 1/4 of a cup tahini, 2 tbsp fresh lemon juice, the zest of a 1 lemon, t tsp mustard, 2 tsp capers, salt (to taste), and pepper (to taste). Mix until fully combined.
Add in water until sauce reaches your desired consistency.
Assemble
Toast flatbreads in the oven on high broil for 5-10 minutes.
Remove your flatbreads and spread hummus atop. Start filling assembly by adding arugula first and then topping with roasted veggies and mushrooms.
Drizzle dressing over the top and garnish with parsley and sliced radishes.
