Pineapple Avocado Toast 🥑

Serves 1-2 people



Ingredients


-2 slices of Ezekiel 4:9 bread

-1/2 of an avocado (mashed)

-1/2 cup of pineapple (cubed)

-1 TBSP tajin

-2 TSP lemon juice


Directions

  1. Toast 2 slices of Ezekiel 4:9 bread.

  2. Cut up a 1/2 cup of pineapple into small cubes.

  3. Slice half an avocado long-ways and remove from skin.

  4. Once the toast is done, place avocado on top and mash with a fork until your desired texture is reached.

  5. Add pineapple to the top of each piece of toast (about 1/4 of a cup of pineapple to 1 piece of toast).

  6. Sprinkle 1/2 TBSP of tajin and 1 TSP of lemon juice on top of each piece of toast (options to add more if desired).

  7. Serve and enjoy!

Note from the author: This is one of my more adventurous creations as of late. I have been in love with avocado toast for the past year and wanted to create my own spin-off.
