Serves 4 people
Ingredients
1 packet of fusilli pasta (13.2 oz)
1 packet of dried porcini mushrooms (1 oz)
1 can of garbanzo beans
1/2 cup sun-dried tomatoes
2-3 heads of broccoli
1 bundle of fresh thyme
1 bundle of fresh rosemary
2 TSP salt
4 TBSP of herb-infused olive oil (more as desired)
15 cherry tomatoes (garnish)
Fresh basil (garnish)
Directions
Prep Ingredients:
a. Mince 2 stems of rosemary and 2 stems of thyme. Set aside
b. Cut broccoli into bite-sized pieces. Set aside.
c. Cut cherry tomatoes longways into 3-4 slices each. Set aside.
Bring a full pot of water to a boil.
Once water is boiling, add 1 TSP salt and the packet of fusilli pasta. Lower to medium heat and stir pasta every few minutes until it is tender (approximately 10-12 minutes). Then drain pasta, run cold water over it, and set aside.
While pasta is cooking, in a separate large pan, add 3 TBSP of water and the packet of dried porcini mushrooms. Cook mushrooms on medium-low heat until the water is absorbed.
Lightly drain 1 can of garbanzo beans so that there is some liquid leftover. Once mushrooms have absorbed their water, add garbanzo beans and garbanzo bean juice into the pan.
Add 1 TBSP of herb-infused olive oil and 1/2 of the minced thyme and rosemary to the pan. Stir to coat beans and mushrooms.
Add sun-dried tomatoes and broccoli to the pan, along with another 2 TBSP of herb-infused olive oil. Stir to coat and let cook on medium-low heat until broccoli is tender. (Option to add a dash of water to the pan if broccoli needs to cook longer.)
Once broccoli is fully cooked, add cooked pasta to the pan, the other 1/2 of the minced thyme and rosemary, 1 TBSP herb-infused olive oil, and 1 TSP salt.
Stir pasta into cooked vegetables, herbs, and oil to fully infuse.
Serve/garnish with cherry tomatoes and basil.
