Serves 3-4 People
Ingredients
- 1 cup Brown Rice
- 1 packet of Gnocchi
- 1/2 packet of Seitan ( 4 oz )
- 5 cups of Spinach
- Salt
- 1-2 sprigs of Rosemary
- 4 tbsp Teriyaki Sauce (Kikkoman Teriyaki Sauce and Marinade)
- 4 tsp Sesame Seeds garnish
- 12-16 Grape Tomatoes garnish (not pictured)
Directions
Rice
In a medium-sized pot, add 1 tsp salt, 2 cups of water, and 1 cup rice.
Bring water to a boil and then turn down to a simmer. Let the rice cook until all the water is fully absorbed and the rice is cooked all the way through. This should take about 45 minutes.
Gnocchi
In a medium-sized pot, add 5 quarts of water, 1 tsp salt, and 1 packet of gnocchi.
Bring water to a boil and let gnocchi cook for 3-4 minutes. Stir occasionally to keep gnocchi separated.
Once the gnocchi is fully cooked through, drain and set aside.
StirFry
Dice 1/2 a packet of seitan into bite-sized pieces and mince 1-2 sprigs of rosemary (removing the stem and mincing the leaves).
In a medium-large sized pan, add 1 tbsp of olive oil and turn to medium-high heat.
Once the oil is heated, add in diced seitan and sprinkle rosemary on top. Stir until the seitan is fully coated in olive oil and rosemary. Turn the heat down to medium-low heat and let cook until the seitan is golden.
Add in 5 cups of Spinach and let cook down. Option to add in 1/8 cup of water if there is no more oil in the pan.
Add in 2 tbsp of Teriyaki Sauce and stir.
Add in cooked gnocchi and another 2 tbsp of Teriyaki Sauce. Stir until completely combined.
Remove from heat and assemble.
Assembly
In medium-sized bowls, add 1/4 - 1/2 cup brown rice to the bottom of each.
Add 1/2 - 1 cup stirfry on top of brown rice.
Garnish each bowl with 3-4 diced grape tomatoes and 1-2 tsp sesame seeds.
Serve and enjoy.
Notes:
If you haven't had gnocchi before I highly recommend giving it a try! I came up with the idea of adding gnocchi into this teriyaki stir-fry and have been in love with the choice ever since. This dish incorporates so many different textures and is honestly so much fun to eat :)! In gratitude,
